Fermentation is at the heart of everything we make at The REAL Co.

Our sparkling teas are produced using multiple strains of yeasts and bacteria, each chosen for the specific flavour they bring to each individual drink. But the strains alone don't explain our flavour. The other ingredient is time.

Our yeasts need to complete their full metabolic cycle to produce the complex fruity esters—the rhubarb, peach, grapefruit notes—that give our drinks their character. Our bacteria need to work slowly and gently to build a balanced palette of organic acids: gluconic acid and others that add brightness and smoothness rather than a single sharp acetic hit. Rush either process, and the flavour collapses. You end up with something thin, one-dimensional, and aggressively sharp—closer to vinegar than to something you'd pour at a dinner table.

Industrial fermenters accelerate because they have to. Tank time is expensive. But we've tried pushing our fermentations faster, and we know what happens: quality drops, quickly and fundamentally. So we don't.

We monitor pH throughout fermentation, but pH only tells you how much acidity is developing—not what kind. The real quality control is sensory: years of tasting, learning to read the acid fingerprint of a developing drink, and knowing when it's right.

Slow fermentation makes our drinks more expensive to produce. We think it makes them worth drinking.
